Must construction employers protect themselves from lawsuits when terminating an employee?

My construction employer recently had to terminate an employee. I am curious as to how we can protect ourselves from future lawsuits from disgruntled employees? You can ask the employee to sign a release -- an agreement not to sue you for being fired -- in exchange for certain benefits. Some construction employers routinely ask employees to sign a release as a condition of receiving a severance package.
